Elaboration

After the October harvest, the cider apples are pressed and their juice fermented for 3-6 months. The yeast naturally present in the skin converts this juice into cider which is then distilled between January and June. This is carried out in a pot still, with a double distillation for the Calvados Pays d’Auge PDO. The Calvados is then left to rest for at least 2 years, during which time it develops floral, fruity and slightly woody notes. Lastly, the cellar master blends the spirits to ensure perfect balance before bottling.
