COURCEL Cognac is produced from grapes grown on the limestone slopes of the Fins and Bons Bois regions in Cognac, Charente, France. Its double distillation and long ageing create an elegant and balanced bouquet.

COURCEL Cognac VS (Very Special) is produced from Ugni Blanc grapes from Fins and Bons Bois, distilled in Charentais pot stills and matured for a minimum of two years in oak casks.


Elaboration
The certified Cognac region, which was created in 1909, is in South-West France, in Charente-Maritime. COURCEL Cognac VS is produced from Ugni Blanc grapes grown in the Fins and Bons Bois sub-regions. The grape juice is distilled twice in traditional Charentais pot stills. The first distillation is known as the brouillis and produces a spirit with an ABV of 28-32%. The second distillation, known as the ‘bonne chauffe’, then produces a spirit at 72% ABV. Finally, the cognac is aged in French oak barrels for a minimum of 2 years where it develops woody aromas and notes of vanilla and prune.
