COURCEL Cognac VS (Very Special) is produced from Ugni Blanc grapes from Fins and Bons Bois, distilled in Charentais pot stills and matured for a minimum of two years in oak casks.

Elaboration

The certified Cognac region, which was created in 1909, is in South-West France, in Charente-Maritime. COURCEL Cognac VS is produced from Ugni Blanc grapes grown in the Fins and Bons Bois sub-regions. The grape juice is distilled twice in traditional Charentais pot stills. The first distillation is known as the brouillis and produces a spirit with an ABV of 28-32%. The second distillation, known as the ‘bonne chauffe’, then produces a spirit at 72% ABV. Finally, the cognac is aged in French oak barrels for a minimum of 2 years where it develops woody aromas and notes of vanilla and prune.
